Twice cooked Pork Belly, roasted Summer Peaches, Apple Soubise and Crackling

This is one of my favourite sauces with a new twist and is absolutely sensational with our Pork Belly, Grilled Peaches and Crackling. We simmer onions for around an hour in apple juice and a splash of white wine vinegar before blending the sauce into a creamy and delicious base for this dish. Bring to the boil with a splash of cream and season with salt and white pepper. A winner all around!
